What's your healthy 'go-to' meal?

I enjoy cooking, I often make dishes like lasagna, cottage pie, stir fry, roast dinners, etc. I'm always trying to incorporate vegetables in to my meals as well, but lately I've been busier with work so when I get home I'm just hungry and tired so don't have the time or energy to make something which will take too long to prep and cook.

Just wondering if anyone has any healthy (plus quick & easy) go-to meals that they like to make at home? I love fish as well, so anything like salmon or tuna is very appealing to me! Also, any tips on packing in the daily veggies? 🥦🥕🧅🌽
