I help in my family's field every olive season, I can't say that I have too much knowledge about it, but I'm sure that our olives get black from itself without the need for any chemical process after a period of time.
I don't know if you are speaking of certain type of olives.

Yes and no. Many are part of a "cheat" process as you say, but black olives have been around since long before such food processing existed.

I have heard that oranges are sprayed with some crap to turn them orange. I guess the same crap could be used on olives.

Peoper isn't black when harvested. It's cooked and turns black that way. Most ground meat you buy (unles you buy lean meat) is primarily fat.
It's from brine (salt water) or due to something else
