That is my absolute favorite thing in the world to me to both cook and eat. I love to cook this stuff since I can taste and tweak it endlessly to my liking. And I enjoy eating since it tastes like it's been tweaked to someone's perfection even if it's not mine.
You can really tell the way someone thinks with these things like the way their homemade gravy tastes more than the perfection of their soufflés, which only tells me that they've mastered precision, and I don't think mastering precision as in the case of baking tells you as much about a person's sensitivities as much as how they flavor their soups, sauces, gravies, and dips.
It's in the latter case where we really know what a person likes as I see it. Sometimes it's too personal to our comfort when we taste another person's sauce or gravy. They can have weird stuff going on there. But it is delightfully weird and maximally enlightening as I see it.

I'd say definitely. I pretty much like all gravies except pork. My favorite ones are turkey, chicken, mushroom, and then sausage gravy. I love guacamole, black bean salsa, queso, avocado ranch, 7-layer dip, BBQ sauces, ketchup, relish, chili hotdog sauce, etc. I like a lot of things.

Yes! Not a fan of spicy things (just can't handle them well) but I love that sort of stuff. Anything involving avocado is amazing. But I haven't learned to make a really good gravy yet, my husband isn't into it so I haven't bothered trying much. My mom's is incredible though, I would put it on just about anything. Even my brother in law, who doesn't like gravy because he says it's just brown goop, makes an exception for her gravy.

No, I like my sauces relatively mild. My favorite sauce is peanut sauce which is in between. But you still taste the actual meat trough it.
