Cracking an egg with one hand - not me

This morning, I made eggs for breakfast, cracking the eggs on the side of the bowl, and using two hands, like I always do. I know some people (great chefs, for example) can crack an egg with one hand, but I never mastered it. Whenever I've tried, all I get is a handful of egg shell and broken yolk, like this...

if I try to do it!

So, the great question that everyone wants to know...

When I was about 19 I worked in a higher end Japanese restaurant. I don't remember what they were used for but I had to crack dozens of eggs at a time. I could crack two eggs at once, one in each hand. It probably didn't take more than 30 seconds to go through a dozen eggs. 5 seconds per two eggs seems about right.

Now, when I crack eggs I swear they ain't like the used to be. The shells just don't crack right. I think the shells are thinner and don't give a clean crack. They are more mushy.

Blame it on mass produced caged birds. Blame it on whatever. But the shell of the eggs just ain't the same.

I’ve been cooking for at least 60 years and this is one of the skills i have acquired. If only someone would pay me to do this!

I'm in the middle of making macrons so I've just separated a dozen eggs. Needed both hands todaybbut a simple crack into a frying pan is easy enough with one hand

Yes, I can lol I'm young but I have been cooking for a long time and breakfast foods, eggs in particular, happen to be my comfort food.

Sort of, I can use one hand to crack it against another object.

if I press my thumb into the middle or the egg it will make a hole, then I can just slowly pick away at it until it falls out.

When working at a restaurant, it's not an option. I have a friend who can ride a unicycle and juggle. Crikey! I bet that took a lot of attempts.

I can crack an egg with one hand. But it takes two hands to clean up the mess I made.

No, I can't. Successful only once. Something like 1 for 500 times that I tried. Normally use both hands.
