Obviously I don't want to blow my chances and leave it too long that she may lose interest, or then again don't want to seem too keen. So is it best to reply a few hours later or couple of days like she made me wait?

Playing games like that = immature
I cannot stand men who play games and if she's the kind of girl who is like me then she'll pick up on this and likely decide to ditch you due to not liking being played with. If she however keeps me making you wait all the time without a valid reason then you can start to take longer to reply. I think it's overall immature of her in the first place to take that long to reply though. I'd consider if she's really worth it if she does that. I know I'd never do that to someone I'm interested in.

If a guy replied days later, I would think he doesn't really care about me or he may persue different girl at the same time. But since she texted you back after 3 days she may be playing mind games with you. May you should wait a day to text her back. That leaves enough time for her to wonder but at the same it's not too long.
