Outgoing girl becomes quiet and shy around me?

So I'm crushing on/flirting with a girl at work and I know for a fact she is single and is interested in me. However there is one issue: I see her talking comfortably with almost everyone we work with but when im alone with her she suddenly seems at a loss for words but still flirts physically. I'm assuming she's just nervous around me and that's impeding her speech. What would be the best way would be to get her to open up or feel more comfortable conversing with me?

I already have her number and she communicates fine via text but in person it's like meeting a whole new person

My first question to you is how are you acting around her? If you are a little bit shy or nervous around her she i most likely picking up on that. I know I o that sometimes. I'm very quirky and fun but when I see a guy I like I tend to calm down and get nervous. Or if he looks nervous I tend to go completely quiet without even meaning it... It's just a thing some girls tend to do. My advice is to start talking to her normally maybe call her over to "help" you at work sometimes. Just the little things like that. if she seems to be ok with that maybe get her number text her or call her. Try to get to know her while not putting her totally in the friend zone. I'd like to think that I'm being as open and friendly as possible. I smile, help her out and crack jokes and she laughs but when it comes to an actual conversation she goes quiet :3 thanks for the advice though!

So then maybe try and talk to her about you first... Start the conversation an finish it. In, out and done. Show her that you feel comfortable talking to her. Then maybe after a while she will feel that since you have told her stuff and been open maybe its her turn.
