So I made a dad joke, and my crush stifled her laugh covered her mouth, closed her eyes, and turned away from me. I always read that we tend to look at our crushes when we laugh subconsciously. So I’ve trained myself to look for this when my crush laughs.
You probably overthink it (again) and, unless you told her a dirty joke, which I hope you did not, she simply found it amusing.
People don't always have the same reactions to a similar situation and she simply took you by surprise by reacting a different way from her usual one. Nothing to worry about.
I am more concerned that the joke you told her was not of the kind that is appropriate to tell to a crush. A crush is usually unilateral and telling inappropriate jokes to people whose feelings are not reciprocated is basically not a good idea because it places you directly in a category of doubtful people.
She thought your joke was funny
Overthinking it would be an understatement.
