Is my coworker interested or just being friendly?

I've been working at this restaurant for a month and this girl instantly caught my eye. I don't like her yet but I knew I would in the future the moment I saw her. I look around a lot pretty much check out every person at the restaurant, her a lot more often. At some point I noticed we started locking eyes (this made me introduce myself). It would almost always be me deciding to look at her only to find her already looking at me. I don't know if this means I'm looking too much. But I do know I've made a conscious effort to try not to because of a weird moment.

One day I looked at her saw she was looking at me and she looked away but I didn't. just to see what shed do. She looked back, then away then back, then she squinted kind of like "tf are you looking at dude?" Thats how I interpreted it. So since then I've been trying harder to avoid looking at her and yet when i do she's always already watching me. And now recently, its been happening more often (10 times in one day recently) and she's been smiling at me (not in a friendly way in my opinion but if she had a distinct friendly way I wouldn't even know).

Making a move would be very deliberate and very noticeable and I'm new so I want to be cautious of how I move in the workplace.

The fact that you seem to "observe" everyone, regardless whether those targets are customers or employees seems odd. I can understand that you look at customers from time to time to assess whether they need something but observing intensely as you seem to be doing is like if you are spying on them.

She realized that you are observing her intensely and I would also react the way she does but to ensure whether I am not a potential victim for something unexpected.

Be very careful that your intense observation of people does not get you in trouble. Lots of people (me included) absolutely abhor to be observed.

creepy only if you see it that way. Target for what? something sinister? or Target for dating? whats wrong with that? we all have "targets" which is a word YOU used by the way. Continuing with that word choice, we dont just shoot around aimlessly. I found her attractive and knew if I got to know her and liked her personality, I would develop feelings in the future, thats not that crazy of a thought. Also by observe, I just mean I look around a lot, I have ADHD and get distracted by people in my field of vision. We as a collective tend to be more drawn to things we find attractive and since she's not a random customer who can't stay all shift, I look her a bit more than I do others. "Intensely staring?" Youve applied the longer stare and what you perceived from my choice of words and used that as a framework to assess what I doing. I dont have time to intensely stare and wouldn't do that if i did, my job pretty much has me working constantly so Im normally focused on my task.

Like I said , I work in a restaurant, so that means if im plating something, and decide to look up because I hear a conversation between my managers happening in her direction, and she's already staring at me, its because she's making sure I dont walk up to her and slice her with the knife I'm holding?

Finally, I asked her if she planned on fully transitioning to my department or work in both. She said both and I said I'd be willing to do that because I didn't know you could. she told me I should do it, that way she could train me. If Im a potential creeper, that means she'd be willing to go out of her way, volunteer to work a training shift, and work directly with me, the creep, for the entire duration of the shift. Money may be money, but I think I can say that Im still in a neutral spot with her at the very least.

Probably interested but I’d talk to her as soon as possible to see if you like her personality, because you might not. If you keep playing eye games for a long time then actually talk and you don’t really like her, she could spin it around as harassment.

well try to get to know he first by talking to her about random things, then you may see how she reacts to you and if indeed is anything there
