Why are guys mentioning height so much on dating apps?

Because women literally won't talk to or consider any guys less than six feet (183 cm) tall, and they'll always end up asking you. This cuts through the bullshit, especially if you're in the positive zone of 6+ feet, in which case, sometimes all you need to do is put in your height and women will come rushing to you.

Me being in the shitty zone for height, I gave up on dating sites/apps altogether. My friend, who is three inches taller at 6'2", is about to get married though and met her through Hinge (although they went to the same high school; never interacted in school, though).

Height is literally the only physical trait that matters to most women. If you confront them about it, they'll give you contradictory bullshit, like "Height doesn't matter at all to me... As long as he's 6' and up." Girls do this annoying contradiction-speak shit so fuckin' much, it's annoying! "Money doesn't matter to me... As long as he can pay for my meal." Or "I hate arrogance in men or men who have high pride in themselves. I like confidence in men; men who have pride in themselves."

But yeah. Women don't want manlets (like myself). What's the commonly used phrase? "If your height starts with a 5, don't talk to me. Swipe left." And the very few short men who do get girls have a little shortcut called "money" and "being a simp," something some of us either can't do, or is unwilling to do.

Presumably, either they've been rejected, or have been told of other who've been rejected, over their height, and are looking to just avoid those who'd reject them on those grounds.

Because most girls are obsessed with height. So of course if you are tall you want to mention it to get leverage and if you are short you want to weed out the ones for whom that's a dealbreaker.
