What does his body language mean?

I was pulled into the group conversation that included the guy I’m interested in. One of my coworkers jokingly states that I made a mistake and tried to put the blame on me. I didn’t stay quiet and spoke up, making him choke up and everyone laughed. I quickly looked at the guy I’m interested in, he was staring at me while stroking his chin with a smirk and raised brows. What does this mean? Or whats he thinking ( obviously you can’t know but I don't know have some ideas)?

When a guy strokes his chin like that, it usually means he's thinking something through and considering it. But with the raised brows and smirk, I'd say he was impressed by how you stood up for yourself to your coworker.

Guys like a girl who can hold her own and speak her mind. And it was probably funny to him that you made the other dude choke up. He was probably like "damn, she's feisty!"

I'd bet money in that moment he was thinking about how cool/sexy it was to see you stand up for yourself like that. The smirk shows he thought it was amusing too. Definitely got his attention!

Next time you guys chat alone, I'd bring it up casually and laugh it off. Say something like "remember when I put so-and-so in their place the other day? Had to speak my mind!" Gauge his reaction. I think you've got a good shot with this dude!
