The first few weeks will be difficult, but that's the case for any dietary change. You may have cravings for animal products at first, but resist them. Don't buy animal products and don't snatch them from others. It helps if you only eat what you buy yourself. Eat plenty, don't limit your calories. Eat until you're completely stuffed and whenever you're hungry. Fruit and vegetables digest quickly, so you'll need to eat a lot. If you feel cravings at night, it means you didn't eat enough carbs during the day.
I suggest fruit for breakfast, pasta/rice/potatoes for dinner and for lunch either eat cooked food or fruit. Good fruits to have around are bananas, dates, mangoes, pineapples, oranges, cherries, blueberries and strawberries.
I personally had to go to the toilet a lot the first month, because I was suddenly eating a lot of fibre. Whereas before I didn't eat more than 2 servings of fruit a week. So don't be shocked if you're suddenly sitting on the toilet a lot, it will become less once you get used to it.
