Switching over to the "clean-eating" lifestyle, but not sure of the boundaries?

I recently started graduate school and after losing a lot of weight and getting my BMI back down simply "overweight" at 27, I have increased back up to 30, which is "obese." I got really mad at myself, but I didn't want to go back to the low carb diet again that I had done before because I was always weak, tired, and I was also losing hair. I've heard that the clean eating diet is a great one to be on and more of a lifestyle change than a diet. Several articles online say that you can basically drink as much water as you want and eat as much vegetables, but that everything else there is a limit on. I am going to try and start adding vegetable to my diet, but right now I can only find comfort in eating fruits. I'm really used to eating chocolate or chips when I study just out of habit, and fruits at least give me a sweet taste to snack on while I study. Some sources say you can eat as much fruit as you want too, because the fiber makes up for the sugar, while others say that it's still too much sugar. I've been eating grapes, strawberries, bananas, and apples mostly. I am not binge eating them, but I am definitely eating more than some recommendations. Any suggestions for alternative snacks? I'm used to eating while I study, and when I don't its hard for me to not think about eating or munching on something. My goal is to eventually transition into vegetable snacks, but at this point they are too bland for me.
