Today I am allowed to eat starchy foods. That means like beans and potatoes. But I don't like beans. And eating rice with veggies and baked potatoes alone is so boring. Any ideas on whatI could eat? I can eat all kinds of veggies today, but no meat at all. I just hate beans, ugh.

Beans are high in protein so I'm assuming that's where you are going to get your protein for today. Unfortunately you don't have many vegan options. Nuts but those are high in calories. Tofu? Lentils? Soy milk? For a heavy source of protein these are pretty much your only options.
You do know 100g of beans is 300-something calories right? Lean meat has less calories than that and slightly more protein. If you trim off all the fat by hand there almost no calories lol. Assuming you cook it healthy I don't see why you shouldn't eat meat.
