You could lose between 10 and 20 pounds, depending on amount of physical activity, however it will be mostly muscle loss as fat is stored in these cases by the brain thinking the body is starving, as a survival mechanism. I'd eat fewer calories in a well balanced meal. If you do a vegetarian or vegan diet consider eating more protein, to stave off muscle cannibalism that your body will use first to feed itself.

depends on what kind of fruits and veggies you are eating but 3000 calories of anything is still 3000
Depends on how much you eat.. if you eat a lot you'll probably lose a lot but you need to watch protein, vitamin, carb, fat, and all that intake or else you'll piss your body off and put it into starvation mode. You'll probably bounce right back or weigh more after if you go back to your normal lifestyle
Why not try Raw till 4 for 30 days? It's a style of eating that only includes plants (vegan) with an emphasis on raw foods. Definitely eat more than 1000 calories though, you definitely won't hit your RDAs eating that little.

That's not healthy. You will gain any weight you lose back due to your body hoarding food from starving. Eating grain's is OK. Oatmeal, potatoes, sprouted wheat. Just eat healthy, no need for drastic yo-yo dieting which will only make you miserable and continue doing that forever.
