Any time you make a big change in your diet your body has to adjust again. You have to adjust physically and mentally. Meat is highly nutritious and filling. You don't need much of it. So it's easy to overeat.
Meat also take much longer to digest, so you need to adjust to that also. With a vegetarian diet, the food is going through your system much more quickly. Meat will take much longer. That's neither good or bad, just different.
Unless you are over eating meat, then you should adjust to it fairly quickly.

You lost the enzyme for digesting meat... It will come back, but you have to go slow. This is what happens to vegetarians who eat meat again.. Eventually you will get over it.
Meat digests differently. Anyway, you don't need meat every day. So you can start gradually and get used to it again. And you don't need a lot of meat. Also replace meat by fish regularly.
