If you're going vego, you have to start taking vitamin supplements, especially since you're a girl. I usually take Iron and B12 supplements. But I would try and get that from foods too.
I'm not sure if they have it in the US, but over here we have imitation meats which are actually made from soy. I eat these a lot because it means I don't have to muck around making up a meal, when I can just make a vegie burger or something with a soy burger that I've bought. You can get soy mince, bacon, pretty much all meat, so you can just supplement them in for where you used to use real meat.
As for cheese, a lot of people don't know this, but it actually contains a preservative called rennet which is extracted as from the stomachs of calves as a by-product of veal. There's special cheeses you can buy that don't contain rennet, and they aren't soy or anything so they still taste the same as normal cheese.
As for tofu, I am not a big fan of it either, but there's certain products (cream 'cheese' made from tofu) that I buy and its really nice.
I think the common misconception is that vegetarians miss out on a lot because of the fact that we don't eat meat, but that is not the case at all. If you know where to look and find the right products you can still have burgers and spaghetti bolognaise because there are more and more vegetarian products out there that you can use instead of meat.

I'm not a vegetarian but I eat healthy and usually eat a lot of vegetarian meals. Are you a vegetarian or vegan? Anyways before you rule out tofu completely I suggest you experiment a little. There's so many different kinds of tofu these days and they all taste different (of course the inside texture is the same but its not your average tofu). I use to not like tofu but after trying some products I definitely realized not all tofu is the same. Anyways you need to be on supplements especially iron but you can get iron from a lot of green veggies especially spinach. There's foods that are made with soy to imitate meat foods. Veggie burgers are amazing and there's so many different kinds to choose from, not just a regular burger. Your best bet is to shop around and to try things before saying no.
