I've definitely been where you are haha, just find what healthy foods you like and find different recipes. Example if you love chicken look up different chicken recipes. I love chicken but omg it can get old quick. You should keep eating high protein but add I'n some veggies and fruits. Don't be worried about fruits like some people say, don't overdo the fruits but I promise some fruits and more veggies will help your body lean out! And you should think about carb cycling! Like 4 days low 3 days higher. That way you still get to eat some carbs a few days a week haha, but keep it healthy still. I swear you will burn more fat like that too. Your body adjusts and gets used to the same thing after awhile. At the very least once a week eat high carbs or even whatever you want. It will keep your metabolism guessing and you will look and feel better. As for food like I said whatever you like just look up recipes, be creative. And like if you just don't kno what to eat or don't really want to eat a lot get some whey protein powder, fruit smoothies with that are perfect! Another idea is cottage cheese. Super lean all protein! Don't forget healthy fats but it really doesn't have to be that complicated. Just use olive oil when you cook or on your veggies and your good. You said you eat a lot of peanut butter. Great fats there too! If your sick of it have a hand full of almonds instead. Good luck

Don't worry about low fat, it's stupid propaganda and actually unhealthy. It is NOT true that eating fat makes you fat. Just don't eat bad fats. Healthy fats: Monounsaturated, polyunsaturated, saturated = Coconut oil, olive oil, butter, nuts, meat, all high in good fat. Don't eat processed stuff or margarine or canola oil = hydrogenated, unsaturated or trans fats. With carbs, it's mostly grains and sugars that you don't want. Vegetables and starches are good carbs.
I know low carb takes a little more effort for ideas, you probably need some recipe lists.

You can try different whole grains- quinoi, bulgur, brown rice, buckwheat- all of which have good protein contents and aren't bad for you.
Keep in mind that potatoes aren't that bad for you. Yes they are starchy, but they are better than flour and some breads.
Be aware that as you do this, you are putting your body at risk, especially when you eat super low protein. I'm assuming that this is only for a small amount of time until you lose the weight you want to lose? If so, you must add carbs in slowly, or else you risk gaining all of this back.
Carbs are OK for you as long as you're eating the right carbs as well as the right types of fat. You don't want to intake too much protein just like you don't want to intake too many carbs. You can eat healthy and still eat carbs.

Don't cut out carbs, they are filling and delicious.
Experiment with chicken breasts and see what kind of healthy and tasty recipes you can throw together. For starters, you can get some tomato sauce (like Prego), fat free Mozarella cheese, and fresh cilantro. With those three ingredients combined with chicken breast and whole wheat pasta, you can have an Italian-inspired dish in 20 minutes. The ingredients are healthy.
Also, try canned beans and see which ones you like. Black beans and refried beans are good. You MUST try frozen vegetables. They are ridiculously cheap and easy to prepare. I have more ideas but this should be enough.It's still the basic concept of calories in vs. Out. If you go low carb, your going to need to increase your daily fat intake for energy and the protein to help keep muscle from being cannabalized by yourbody for added energy production. You can still eat all kinds of breads and pastas, but they need to be slow acting carbs that won't affect blood sugars as much.
Turkey, almonds, fatty fish, and walnuts. You could also get some protein powder (it doesn't have to be expensive, they're all basically the same) and use it in shakes and smoothies. I would suggest rethinking your position on carbohydrates too. Instead of cutting out breads and pastas, try switching to whole grain. It's much better for you and will give you a lot more diet options.
Haha one more idea. You said you eat a lot of salmon and are sick of it, same thing happend to me, buy talapia! It's somewhat cheap and it's good! Get some Ms dash lemon pepper a little lemon juice too if you like it and cook it with that and olive oil. I love it!

Grill a piece of meat and take some mushrooms/peppers/onions, tomatoes, grill them in a pan with balsamic vinegar and italian herbs.
Are you carb loading weekly? You should be.You can change the fish to tuna or a white fish. I would also recommend chicken. I would NOT cut out all carbs -- for example wheat bread is good for you.
Chicken in general has a good source of protein, especially the breast meat. You also have dairy products like tofu, soy, milk, cheese etc. Are you into weight loss or ..?
if you are hoping to lose weight I would say try being vegetarian, I lost some weight doing that diet and I also had a lot more energy and felt healthier
one thing your missing is healthy fats. try fish oil or flaxseed
