Something fancy, romantic, yet simple. Bonus points for you if you can make him feel like he made a difference (he's not reading this, is he?). But I have seen cooking shows where they have a "guest" and that guest doesn't know cooking from lighting a cigarette. Your boyfriend has to be smarter than that and it will work to everyone's benefit.
And when I say simple, I mean one of those things where it looks like you slaved all day over a hot stove when really it was easier and only you have to know. Sadly I don't have any genuine ideas. But it sounds like you'll have an awesome time and I can't help but wish you the best!

I'd suggest pasta, it really is one of the most varied dishes you can make. You could make bolognese or a cream sauce with salmon or mushrooms. Yummy!
Once he knows how to prepare pasta, the only thing he'll need to tackle is the different kinds of sauces Material for future cooking dates :)
I suggest a stirfry. They're pretty simple, but are incredibly versatile---which means once you get the basics down, you can experiment and come up with all kinds of different dishes (i.e. use different meat, different veggies, different sauces, serve it with rice or pasta, etc.). So really, you'd be teaching him to make many dishes instead of just one.

Haha for me it's the opposite- I have nooo idea how to cook but my boyfriend does. So the first time we cooked together we made some pasta which was really easy and we made the pillsbury crescent rolls and some cookies. We've also made tacos which wasn't hard either and baking cakes and making pancakes and stuff if you want to try breakfast for dinner.
pasta dishes like spaghetti are simple easy to make
I'd suggest something simple and healthy, so if he does cook for himself, it won't be junk.
Try a layered vegetarian lasagne, perhaps.
