What is your opinion on specialized diets?

For any reason may it be religion, to loose weight, health reasons etc..

Since I don't eat gluten or dairy (if I do I get really sick) I've found a surprising amount of people seem to get really offend by it, it's like they can't understand/ don't believe that people sometimes can't eat certain foods. I know may people that are vegan or vegetarian people seem to respect that far more.

So what is your view on specialized diets?
