I'm not saying it's celiac disease but you didn't do enough to discard it. If you just had a gluten free diet for a month, your body might have been recovering but still hurting from your immune system reaction (depending on the strength of the reaction, it might take you months to recover). Also, don't expect anything out of the ordinary if you have celiac disease, it's not an allergy, it's an auto-immune disease. You won't experience any reaction. If you want to be sure, eat a normal diet and get a blood test for the gluten antibodies.
I have a friend who spent 3 months in a hospital at 29, that's how I know about the condition. The usual reaction to gluten is just weight loss and malnutrition, but you won't notice an explosive reaction. It's an autoimmune disease. Your immune system produces antibodies against gluten, but they also mess up your intestines (that's why you stop assimilating nutrients). You don't need to eat that much gluten, depending on your sensitivity trace levels can trigger the symptoms.
The antibodies don't vanish over the night, they'll stay for a while in your blood. That's why I'm saying that one month of gluten free diet might be insufficient. Just get tested, seriously. It's an easy and cheap blood test. If you need a gluten free diet, the sooner you know the better.
I would look into this because this sounds like exactly my problem about 2 years ago. I was working a normal job nothing too hardcore, and I dropped from 240lbs to about 200 in 3 weeks. I ended up having to spend the week in a hospital and was soonafter diagnosed with type one diabetes. I would talk to your doctor about getting an A1C test done to check your keytones, and your cholesterol/hemoglobin levels. This is my suggestion.

any lifestyle or attitudinal changes in the past few years? Dropped certain sports? Still working full time? Busy routine? Any depression, lethargy? Even if it's under your radar at the moment, how do you feel towards life? Still not taking any of those dubious pills I hope?
Are you in love? Seriously, that can affect your weight - either way!
Otherwise, why not track your calories in versus your calories out (plenty of smartphone apps to do that with). It'll only be an estimate at best, but it might be enlightening.
If the doctors can't find anythng wrong, then start working out. This is guarantted to add muscle weight. Do some light weights to start, but do more cardio than weights.
My first thought was HIV or cancer, then hypogonadism(or hormonal). I'd kick caffeine or any caffeinated products. Start eating an avocado a day.
Eat more :p or eat something fat once a week/every two weeks, nothing wrong with that if your weight is okay!
Try a high gluten diet.
it can be psychological.
