Because the smaller quran book is easier to jump over. That and the fact they are clearly not holding the thing right over the quran and are moving it away if the cat looks like it might step on it. I wouldn't be at all surprised if they even trained the cat not to step on the smaller book or at the very least only included the part of their video where the cat didn't step on it.
So that is the rational explanation. If I wanted to play them at their own game, I could say the cat won't step on the Quran because it doesn't want to touch the evil and is avoiding it like the plague and that cats only touch things they like.

Cats are VERY 'attuned' perceptive animals HOWEVER... they are ALSO very circumspect curious animals. Th cat most likely passed walking upon the Quran based upon the SCENT of the ink, paper, bindings or the human perspiration as being unfamiliar.

People can use anything to justify their religion being true, this is just one of those examples.
