For one thing, they will claim that Catholics don't read, study, or know the Bible. This is false because it was the early Church Fathers and councils who complied and defined the biblical canon.
I've often asked where it's explicitly stated that all matters of faith, morals, and practice must be clearly and explicitly found in the Bible. My next question then would be where does it say that all this must be read and understood in light of modern vernacular understanding and thinking? I have yet to receive a satisfactory answer to either question.

They may also make claims about the Eucharist, the priesthood and the papacy, and a host of others. The only other major one I can think of is the claim that the Catholic Church didn't actually start until the 4th Century. This is false though because Saint Ignatius of Antioch, a direct disciple if Saint John the Apostle, wrote of the Church being "Catholic" in his letter to the Smyrnaeans in AD 110.
So basically, the claim that Catholics aren't Christians is historically unsustainable.

When most people say Catholic they should be saying Roman Catholic or RC. So was St Ignatius writing the church was all embracing and that it was open to everybody rather than saying it was Roman Catholic perhaps?

That "Catholicism" was good Catholicism, back then in the time of Peter, but today? Catholicism is a bit skewed, if not-- very. Things such as repenting to the father of the church is actually biblical, believe it or not, but these "fathers" of churches-- are they really fathers? Has God really called them to be priests, or was it just a title handed down to them, or even worse, a title they chose for themselves?
There's that and things like hail Marys'. Hail Marys' are demonic. It is written that she'll always be called 'blessed' for carrying the Lord in her womb but it didn't say she'll be prayed to, neither the saints.
There's just a lot of [weird] stuff that happens in Catholicism that proves it's drifted very far from Christ. I don't like it and I don't suggest anyone follow it. It's very religious and odd. If you're seeking Christ, just go to Christ and ask the Holy Spirit to lead you to the truth, to grow in His love and spiritual knowledge.

The "rock" Jesus is talking about wasn't Peter, but what Peter had said.
Jesus and His Disciples are talking about who He is. Jesus asks who they say He is and Peter replies that Jesus is the "Christ, the Son of the Living God". It's that revelation that the Church is built on rather than Peter himself. The King James uses the pronoun "thee" talking about giving the keys of the kingdom of heaven. "Thee" is a plural, not an individual pronoun. "Ye" would have been if it referred to him alone. Jesus was speaking to all the disciples, not only Peter.
As far as all Roman Catholics being Christians goes, it's not true. Some are, some aren't. Going to church on a Sunday doesn't make you a Christian any more than sitting in a garage makes you a mechanic. Christianity is about a change in your heart that establishes a new relationship with God through Jesus (not Mary). It's not about religious dogma.

Yeah Catholicism and Christianity started in the same plane and time but now they are very different.
Christians pray only to the God/the Holy Trinity and acknowledge that they're all sinners who are no better than anyone else. Christians also acknowledge that they can't earn their way into heaven /because/ they're sinners. A Christians only route to heaven is through Christ's mercy.
Catholics pray to the saints (dead catholics/Christians) for mercy/cleansing/favor. Catholics believe that mass makes them sinless and perfect. Also (at least during medieval times) Catholic priests claimed that they themselves had the power to forgive sins and would often require sums of money to do so. A Catholics route to heaven is through their own power and perfection.
