I don't really pay attention much about their history so I'd just go for their aesthetics. Ancient Greece/Rome because of Pillars, Mayan because of it's unique gold + red aesthetics and China because of curved roofs. They make good fantasy settings.
Egypt has always fascinated me. Greece even more so. I was for nearly a decade a practicing Hellenic polytheist, which required extensive study of the whole civilization.

Some of the middle Eastern ones. It was once a much greener place think there are many dried up rivers.
Early hellenic civilisation too they set up most of the first cities in the nothern Mediterranean in the ballads, Italy, scilly, southern France and Spain. Same as in Asia minor and the black sea and possibly the caspian sea. They made great explorations into the Atlantic to Britain, Norway, the rivers of Germany and possibly the americas. The whole home's oddessey may have been based on a real journey that Greeks sailed through the black sea into the caspian sea and sailed on a now dry river south into the Indian ocean. The last free hellenic kingdom was in India after the conquests of Alexander the Great there were all these powerful Greek kingdoms that though divided survived for a few hundred years.
