Guys! Why do you sneak behind your girlfriend's back and text/talk to a girl whom she is insecure of?

I have this guy friend who has a girlfriend. They have kept their relationship a secret but he told me about her. She doesn't know that. We all are in the same class. We are almost 21 22 years of age.
However she asked him to stay away from me when she saw us talking, asked him to unfollow me on social media. I accidently stepped on his foot and she even made a huge drama out of that. She is pretty nice to my face though. He often tells me that they fight a lot, but has never said anything about leaving her.
But i wonder why is the guy still super nice to me, we have hung out a couple or so times without her knowing that. And we text a lot and he is flirtacious with me as well. We are very good friends. Why is he sneaking behind her back? I have started to feel pretty uncomfortable now. I cannot straight away back off and not talk to him at all. I just want to know why is he doing this?
P. s he has a 3 year old relationship and i became his friend only last year.

I think some guys have their girlfriends because they are sexually compatible with them and that's it, but they aren't the best at being "friends" with each other. This is why they fight and have conflicts, but yet remain in a relationship together. He still wants that non-sexual connection with a woman at a friendship level, like someone he can talk to, share with, confide in and so. This is where you come in.
I also agree with @OrbitalSpaceMan that to some degree all men are programmed to mate with females and being friends with as many females as possible increases his chances at procreation and passing on his genes.

I think you are a 100 percent right. But i also count that as cheating to some extent because this really makes me guilty as well that he doesn't let his girlfriend know about speaking to me. Thank you sooo much though, appreciate that 👍👍

He may not be telling her because he knows she would freak out and he is simply trying to avoid another fight and more drama.

Because the chemicals in his brain tell him to mate with you, because he is a human lmao. If you want to back off him, just leave him alone. Thats why celebritys date sometimes on the same set. Example Twilight. But once the movie is over they are like meh and move on. Same with him
