Its really not that she doesn't believe you, its just that she has a lot of trust issues. If she's had bad experiences with guys in the past then that's probably why. Just talk to her and ask her if she trusts you. I think if I was in her shoes I'd want my boyfriend to ask me why I have trust issues. I'd want to talk about my bad experiences with guys and then have him assure me that he's not them and won't do the same things. You can't prove to her that you're being honest, because its more of a mental thing. Her mind is probably telling her not to believe you.
Did you do anything before to make her distrust you?
If not, you really need to sit down and have a talk with her about how relationship should be based on trust.
I have no idea why she is with you if she doesn't trust you.
