Do girls ever change their mind, or regret rejecting a guy?

I asked out a girl that I work with (part-time while in college) because I was really into her and I thought she was flirting with me when we were around each other; but she had basically told me she was "sort of" involved with someone, though I think she was just fibbing to let me down; on Facebook she says she's single and she had mentioned an EX boyfriend. So I'm pretty sure she's actually single. Anyway, we used to be very chatty and tease each other/joke around but since the night I asked her out she had acted cold toward me, basically ignoring me (I just try and be neutral/friendly and don't act cold to her just normal) but her demeanor/body language seems like she isn't meaning to be cold towards me.

Is it possible she regrets turning me down, or that she was just scared to give me a chance? Her personality is kind of guarded, she tries acting kind of tough and isn't one of those drama-oriented girls and seems to be the type to hide her feelings. Am I just grasping at straws here or is it possible she is acting weird because she is into me? If not, why is she acting so weird about the situation? I knew it would be a bit awkward at first, but thought we would get over it and move on, but she doesn't seem like she could do that.
