What would a relatively active female's diet look like on any given day?

I'm a studying personal trainer and have offered to help my friend in the gym. But I don't know much about female nutrition. I have a friend that wants to gain a little bit of weight. Just a bit, and very slowly. She is coming with me to the gym quite a lot and on her leg days she really pushes it with squats and deadlifts. She says she wants to get some curves. She is also using a standard protein powder, and drinking it with half soy milk/half water.
She's average height I don't know what it is exactly. She weighed 59 kilos last week when we checked. I know the average woman should eat 1200-1500 calories per day, but what about a girl with a slightly fast metabolism who wants to gain a few kilos, who is also doing weight lifting?
