So an attractive girl (men often tell me that I am attractive) gives you attention. She bring cakes, sweets, fruits and gifts for you.
this guy I like stared at me, was always being around me, was shy when he talked to me.. but later said that I was not his type. Why would he act interested but later reject me?

I will answer that in parts:

If she does that with me then of course I would love that attention which she gives me and even though I may not be friends with her but I would find that appealing and will appreciate her actions and effort. I will tell her that she is free to contact me or message me whenever she is in need of my support, opinions, suggestions to take decisions or to clear her mind.

That is my way of showing appreciation to her actions and efforts.

Yes that was wrong of him of do so. Maybe he was testing the waters and I don't think he was a genuinely shy guy, because that is not a typical shy guy's behavior.
