How are romantic relationships supposed to formulate organically?

I'm 25, and I have never had a boyfriend. It seems as if these past couple of years, my emotions have been stable regarding romantic relationships, so I don't feel instant butterflies, and I'm also a virgin, so it takes me a bit of time to get to know someone before I get those romantic/sexual feelings.

In June, I met a 26-year-old guy on a hinge, and we have been on about 7 date as of today but we haven't kissed or held hands, but I have initiated goodbye hugs when he drops me home ; he is also inexperienced in relationships, so I guess we are both navigating this together.

Our dates have included dinners, mini golfing, bowling, window shopping, movies and a board game cafe.

I feel a bit shy around him, lol, and awkward, and he is a bit uncomfortable around me, but we have improved as I feel more comfortable. Everything else has been going well, but then the nerves kick in as I'm unsure about the process of a romantic relationship. How does it formulate? What should I do? Are their questions I should ask him? As of now I let him initiate our text convo as he has a schedule in which he texts me 2-3 times a week and we then go on a date on weekends.
