Why do some or many girls want to define things before they even had the chance to get to know me?

hi,
so I heard this sentence from quite a few girls lately and it's getting me really jaded and frustrated.
basically, I meet someone, a few even just online, and before we even met or after a very brief chat in real life they say something like "I don't mind hanging out, but just as friends".

some even have more original excuses, kind of "it's not you, it's me" routine.

one of them which I met briefly said she just got out of a relationship and isn't looking for anything when I texted her, but then I saw her on a dating app that stated she is new there.
it kind of makes me feel like I'm not good enough in their eyes and makes me think if we start like this limiting the options even before we met then what's the point?
what should I do? what should be my approach?
