When working a short staffed job, what would you do to ensure you don't get burned out or overwhelmed?

I currently work in a restaurant. Right now two of our cooks are in jail and one got fired for being a hindrance and a douchebag. That just leaves me, another guy, a prepcook and a manager as kitchen staff. So... We really have nobody. I already have 7 hours overtime. It's wearing me out because I worked 2 12+ hour shifts this weekend. I need some rest, I feel like my mental health needs a break. What should I do to slow it down a little?
