So, I understand why a teacher has to go to college to teach high level math, reading etc. but really anyone can teach basic math, reading etc
You need to know more than what you teach so you understand. Now if your just teaching basic algebra of 2+x=5, you don’t need a college degree but teaching is more than than just telling people thing. Beable to break things down to explain something is a skill. Now back to needing a degree, you don’t need one but schools want one. It probably to make sure your smart enough and actually are capable. Back to teacher shortage with schools, they normally would want a bachelors/masters and some certification in teaching and a state license. Due to the shortage lowered the requirements such as certifications. They even started to use the military to teach when some don’t even have a bachelors. Haveing a degree make it more flexible to do other things. When you work for military you are assigned for things like this part of “duties as assigned” with in the government.

Because higher education is a business like everything else. Requiring degrees for things that don't need degrees raises the barrier for entry and limits competition in those fields.
Also it creates a whole new industry of diploma mills.
I have a degree in science and a law degree. I use neither because I decided to stay home and have children. So I am not anti-education, I am just educated enough to see the scam we all bought into.
Because being a teacher isn't only about the content in which you teach. You also don't just go into teaching with a specific year level in mind, that would make your life incredibly hard to find a job. Being able to teach multiple year levels is more desirable.

You kinda answered your own question there.. But to expand on that, that credential is needed to be employed as a teacher. You could always be a substitute though!
Go to college and be a doctor or something and not end up like me
