Girl pretty much rejected me after I asked her if she wanted to go on a date. The very next day at work when I said goodbye to her for the day. Instead of saying goodbye, she mentions that we need to figure out bowling. I said to give me a time and a place. She said that is my job to figure out. As this conversation was going on she blushed and turned really red and got clumsy and almost ran into the door on the way out.

My question is why would she wait until it was just me and her in private and suggest that we do something, the day after she rejected me?

She playing games boy. She knows you like her now. I don't think she regrets it, some girls like to reject you at first in order to test your interest in them. Happened to me before, it's a weird game they play. Go out with her and see what happens.
