That stuff sounds really good. And it's a great idea to make delicious food in advance so that you don't have to cook during the week, especially after 10hr days. AND, I love that you eat real food instead of fast food.
I'd don't do much cooking. I only make simple things for myself when I get hungry. Except, every once in a while, I make about a gallon of spaghetti sauce with Italian sausage, chunks of tomato, shredded zucchini and all kinds of stuff thrown in. It's lasts us for a long time.
My wife is the one who "throws down". On the nights when she is home early enough, she makes balanced meals and there's often enough for leftovers, sometimes lots of leftover meat for sandwiches. And when she makes me tuna noodle casserole it lasts several days.

I like to cook and I like to eat and there's some days when I get off work and late and I don't want to make a big mess at the cleanup so I'll go get junk fast food and I absolutely hate that so I try to cook way more than I should depends on what I'm making it the time cuz I like leftovers but yeah I I cook enough for at least five people or more and I can always freeze it
No, I never make more than one entrée at a time because I think food tastes so much better when it's eaten the day it's cooked.
There are often leftover, and we'll eat those for sure, but I don't plan for several meals cooked on the same day. Food tends to toughen up in the fridge and freezer.

I usually cook one big meal like just pasta ( Rigatoni's ) with sauce, I knew this elderly woman who was from Georgia USA and she cooked one big meal for her and her husband and they ate at 12:00 noon and that was it... I cook enough to have it more than once. I'm going to cook a early Turkey tomorrow. I will eat sandwices from the breast for several days. I take the rest of the cooked turkey and make turkey stew. Its good and then in the freezer I put the leftover soup. When ever I feel like take one out and its good for a couple nights too
Maybe it's a Pavlovian response, but I generally cook one at a time. My mother used to be big on making a big pot of something that would last for days and days. So I don't cook most things in a quantity so large as to have leftovers. There are some exceptions obviously. Anything that takes a really long time or is an inordinate pain in the proverbial, I'll make a bigger quantity. Also, my favorite part of Thanksgiving is the leftover turkey sandwich the next day. But generally, I avoid leftovers like the plague. Plus, I actually enjoy cooking, so I don't try to avoid it by making all my meals for the week in one attempt. And, as I've gotten more experience through the years, I can often cook in not much more time than it takes to nuke leftovers anyway. I go all out a complete 4 course meal. I even set the table with the good chinaIt depends how long the meal takes to prepare, if it is more than 2.5 hours, I try to make 3 days worth to save time and if it is less than one hour, than I just prefer enough food for one day.

Our family usually makes big meals, but we also need something to pack for lunches for work. It gets used up pretty quickly.
I just focus on the main course and that's it, sometimes I also make soup as starters and salad. Mostly it's just the main course and salad.
