I always grew up eating well-done. I was bugged out by bloody juices that would come out when you cut it if it was cooked less, and I actually enjoyed the dryness of the texture.

Then I was a bouncer at a bar that had a restaurant downstairs, and I got the steak special one night, and the cooks gave me so much shit about cooking it well-done that I folded and got it medium. It was fine. Then I was going to fancier restaurants once I was making more money and had a serious girlfriend, and I’d order filet mignon, medium, so I wouldn’t look like a culinary Philistine, and with a top cut of meat like that, I definitely wouldn’t cook it dry. The cubed steaks I ate growing up…. well-done, haha. But I won’t let anything south of top sirloin in my kitchen these days, and usually I go tenderloin, so I’ve adjusted to about 140 out of the oven/off the stove, 145 after resting.
Marinated overnight, seared, and medium.
OK, I don't know shit about cooking steaks, but I'm learning. The one I ate today turned out pretty well. Next time I'll beat my meat first and not cook it quite so long. ( I knew I should beat my meat first, but I forgot. )
Before yesterday. I would have cooked it on medium heat. The Internet says high heat to sear, then medium-medium high heat till done. The Internet isn't always right, but when it comes to coking it knows a lot more than I do.
medium rare for me
don't ever order your steak well-done because restaurants use meat they have to get rid of that is past its time and that they otherwise would have thrown away, because you can't taste the difference
if you truly want it well-done, order it medium, then send it back to have it "done a little more." chef will know what you're doing and appreciate your culinary savvy
Depends. Medium if meat quality is average, medium rare if it's top meat quality.

Just curious... how is well done still tender? That sounds more like medium or medium-well.
medium rare and it has to be a good cut no longer can you consume things like chuck... but things like new york steak or london broil are good enough.
I like my steak sizzling & for food safety reasons I like my steak to be cooked above 150 degrees Fahrenheit however if you burn it I’ll pass. Medium rare to medium well.
Anything past medium and you shouldn't be allowed to order meat ever again
Well done, not burnt nor dried out, but no pink at all. I know, throw the rotten tomatoes at me now for ruining the steak.
I eat mine medium well. I've eaten at the table with people that heat it so rare, it could walk off the table! 🐄

I am a medium rare kind of guy but I can eat it anywhere from rare to medium well. There is no such thing as a bad steak done on a grill. Good cuts of steak are horribly expensive but the taste is so worth it if you can afford it.

I generally go for medium rare so ask for rare when dining out but will go medium for making sandwiches

You mean black and blue? Or medium rare? Black and blue and rare both have cool interiors. Medium rare has a warm interior. Medium is a hotter interior with pink. Medium well is hot with almost no pink. Well done is shoe leather
Blue rare. It's more rare than just rare. A lot of restaurants won't cook blue rare.
Any more then medium rare is cooked to much.

He also turns burgers into hockey pucks. I stopped eating burgers.
@TrueConfection I make the best burgers. I make them a little bigger and get big rolls from the bakery. I get the chopped sirloin and pre heat the grill. Cook them 5 minutes on a side. If I feel ambitious I throw on a couple slices of bacon.
