Do you like shortbread biscuits?

The oldest biscuit in Britain (13th century but probably much older) is the Aberffraw Biscuit (middle pic) Legend has it that a Welsh king was walking on the beach and his wife spotting a pretty scallop shell, asked for a biscuit to be baked in the same form. However, a far more realistic source for the biscuit was the pilgrimage to Santiago de Compostela, 8th Century onward with pilgrims wearing badges on their hat in the shape of a scallop shell.

But in reality, it's just another shortbread biscuit like its cousin the Scottish shortbread or the French Sable Breton and many others.

Personally, I like making the Sable Breton because it lends itself well to the local butter.
