Why do guys cheat on their woman with women who are jealous of her?

I’ve seen this many times. A woman gets cheated on by her man, and the “other woman” is jealous of the original woman so wants to one up her by sleeping with her man.

Meanwhile though, why does the man cheat on his girl? Especially with a woman who is jealous of her so it’s definitely a “downgrade”?

Just because someone's jealous don't mean they are a downgrade, insecurity can happen to the most wealthy or attractive people, can happen to anyone.
So that's a moot point there.
But also jealously is hot. It's easy to be attracted to a possessive person which often a mistress is, makes you feel more craved for.
