What can I do to attract a man my own age and not 20-somethings?

I look younger, but that's all that's younger about me - I'm mature and serious.

Why do only young people approach me? (And only online, not in person.)

In person no one ever approaches me.

When I approach anyone they get all nervous and flustered, maybe spill their drink on themselves and that's about it.

by the way., I dress my age, so it's not about that either.

Because every consecutive generation is more online than the last. It's only natural that you'd be encountering more people younger than you. Especially since online, physical appearance isn't much a part of being approached, so they very well might know your age, or be considering it.

Well that’s a complicated question. Probably mostly depends on where you’re meeting them and how you interact. I think a lot of guys in their 30’s are either married or divorced/single and doing their own thing. So you approaching them is probably catching them off guard. Our generation is kinda stuck inbetween the more traditional meeting in person and online apps.

Go to divorce support groups, you will find nice guys who don't want to be hurt again.
