He frequently tells me he will make sure we are in shape. He suggests intense workouts. He tells me to keep working out even if it hurts. When I send him my jogging progress he says it's about being consistent. When I tell him my family said I look thin he said "Good." Is he not attracted to me?
Don't know where you are getting this. He doesn't say one word about you being overweight
You should be thankful he is a long term thinker and will ensure a good future for both of you

He sounds like a nut job.
People who obsess over the gym so they can be "healthy" almost invariably do other things that are worse (smoke, drink, tan, etc).
I would consider breaking off the engagement, find someone better.
