How do you keep a guy at work interested?

I get along well with a guy at work. I've been in my job for nearly a year.

We chat everyday and the other day was his first time he asked me to hang out outside of work.

How do I show him I'm interested? I don't know if he's into me or not as he doesn't show any signs.

Eg: Another girl at work has her work crush and they're always hanging out, messaging in teams and he buys her coffee etc.

The guy I like doesn't do anything

Well first off you aren't going to like my opinion. Don't date coworkers. I cannot tell you how bad of an idea that is. I have seen so many questions here about what to do when the person they were dating (coworker) and them had a fight and now have to work together. It is literally the worst idea. But if you are going to do it anyway then it sounds like you need to make the first move because he doesn't either notice you or he doesn't have interest. You making a move will tell you if he has any interest and at least get you noticed.

How do you ensure that a guy whom you work with remains interested in you? By deploying the time honored art of the prick tease. Wiggle your butt ever so slightly whenever you walk past him, and consider occasionally pretending to talk to one of your girlfriends about how incredible your date with another guy was. Drop a pen, etc on the floor when you know he's watching, and remain bent over for just a brief moment longer than necessary, and within a week, you'll have him in the palm of your hand.
