I was athletic in high school and in very good condition. But I was in the best shape of my life in my mid-30s. I would have continued to get in better shape if I didn't have injuries. If I didn't have injuries, I don't know when I would have peaked, but it probably would have been in my 40s at least.
Of course there are different ways of being in shape: muscles, agility, balance, endurance, etc. Those are not all going to peak at the same time.
You should be able to gain muscle until 40s or 50s, then a period of maintaining, then eventual loss no matter what you do.
There is no reason why you should gain fat as long as you get exercise. Your youth energy will subside, so eat accordingly. I was trim until around 50. I gained weight because I quit smoking. If not for that, I would never have gain weight. A LOT of older people never gain weight.If people peak by 30, it's because they quit being active, not because of age.

You can take care of yourself and not worry about going down hill
it's harder to keep weight off and easier to get hurt if you aren't already in an established regimne of good nutrition and exercise
