I got into a car wreck today. The man who hit me was extremely hostile off of the rip towards me, started insulting me and calling me all types of names. When I returned the energy to him, he suddenly stopped arguing and wanted to pretend to be the mature one by ignoring me?
It's normal human behaviour.
Sometimes when our anger outburst is just empty, or simply out of habit. When in our lives we see that our this habit is easily helping us and nobody speak anything to us then we start using it as our easy shortcut to get things done.
But one day when we meet someone who challenge us, and our that habit, who question out that habit it make us shocked and humbled and uncomfortable to face it and we try to simply make ourselves vanish from that situation.
It happens.

that seems to have been a high stress shock situation for him. understandable to not work your best in that situation. you mirroring that behavior obviously made him self reflect and realize that this isn't the best thing in the situation but by you behaving that way, you put yourself in the position where you were acting immature so he had the point and that way he would easily avoid having to admit his own weakness there. so that's a trap you set up for youself by mirroring his behavior.
This has to do with the fight-or-flight syndrome, common in humans and other animals.
When in a crisis, the initial reaction is to fight, but when the other person pushes back, it switches to flight.
In this case, the "fight" is him being hostile towards you, blaming you. The "flight" is him calming down and being civil.
To put it another way, the man is angry at himself for hitting you, but once you turn things around, he calms down and recognizes his mistake.

He got scared when you stood up to him. He thought he was going to steamroller you because you are a girl.
His logic is he's a bully. He's probably gotten away with this most of his life.

In a word, shock. People do very strange things after receiving a shock to the system.
People respond strangely after an accident. I think the accident probably scared him a lot.
