You'd lose a ton of water weight initially, then start losing a couple lbs a week ongoing. Biggest problems would be metabolic slowdown, you'd actually be better off spiking your carbs once a week to boost hormone levels. It would also be a good idea to mix up the meat source, sardines, eggs, greek yogurt, chicken legs or pork, etc. You'll also need to eat quite a lot of protein - more than you may realize.

well, not eating grains/carbs is controversial, but some say it's actually healthier for our bodies as we can process proteins and vegetables much easier…that carbs are what cause us to gain excessive weight.
I'm not sure the sardines are the best way to go, though. Some sort of protein that's more substantial would be better.
