Can you eat as much as you want on a vegan/raw food lifestyle?

I thought that if you eat more than you burn you will gain weight. Even if the food is healthy. Why is it that vegans or people on a raw food diet eat over 2,000 to 3500 calories per day a won't gain weight? A lot of you tubers ( mostly women) who are on the vegan lifestyle say that they eat 3500 calories per day and they are all really slim. This is without a lot of exercise.
Can you eat as much as you want on a vegan/raw food lifestyle?
