How about Talapia? You can buy the frozen filets and cook them up with some olive oil and spices. Good, easy, and inexpensive. You can also do some spaghetti squash pasta that is quite tasty. Black bean burgers are delicious. Asparagus is great soaked in some italian dressing and then bundled in the oven. Do you eat feta cheese? You can do some greek dip that I actually eat for a meal it's so good. Feta cheese, tomato, green onion, olive oil, spices chopped and mixed on some toast or crackers. The dip is amazing!

Sure do... make some spaghetti sauce with cut up veggies and a can of tuna or veggie rounds (veggie burger). Both are less expensive than hamburger, and are way better for you!
The tuna really blends well with the sauce and does not overpower the taste. It's nice and mild. It is also full of DHA's (brainfood), minerals and vitamins, and is a good source of light protein, not to mention it is much leaner!
