I'm trying to tone up so I am watching my calories. I know meat shrinks when it's cooked so do you weigh it before or after to get the accurate nutrition information
Unless you're talking about grassfed liver from a trusted source/organ meats then you want to cook it as your body can't break down the protiens as well when they are raw.
It shrinks/loses weight from losing water and possibly dripping a bit of fat not from losing calories unless you burn the hell out of it.

If you're talking about calorie counting then always weigh your ingredients before cooking since otherwise the slightest difference in the temperature can mean more or less water inside your food but same calorie amount. This goes for meat, vegetables, noodles, rice etc.
