Is my weight OK for being up?

Your weight can vary by as much as 9lbs during the day, believe it or not.
This is why your most accurate way to track your weight, is to weigh yourself at the same time every day, usually out of the shower, naked, and after you've been to the bathroom.
And then to track that weight using what's known as a 3 day floating average. That's a mathematical technique to remove the effects of any daily variations.
"I have also been eating more as before I was only eating once per day."
Yeah, that was a bad idea. You should eat 3 balanced healthy meals a day. Eating less than that will screw up your body metabolism.
The amount of calories you burn during the day, depends on how much muscle mass you have, and what activities you do. If you screw up your meals and calory input, your body will resort to breaking down your muscle mass for necessary protein. This lowers your metabolic rate, and means that when you do eat, it gets stored as fat.
My nutritionist and trainer said the same thing about your body storing fat so I have been eating more, about six times a day. No junk food, mostly salads and protein.
Good. Six times a day (smaller meals) is a current theory on weight loss. The idea is that your basic metabolic rate slows down between meals, and so if you spread your meals and eat 6 times a day, your overall daily metabolic rate will be slightly higher than if you ate 3 times a day (slightly larger meals).
There's no real compelling evidence for it, but lots of circumstantial evidence.
Sounds like you have some good advisers.
I'm just hoping I don't gain any weight. I don't want to get fatter and have to buy bigger clothing.
Don't obsess about your weight. Muscle, water and fat all weigh a different amount so what you need to observe is what kind of weight your gaining or losing (muscle, water or fat) and the changes in your body. The fact is you want to be losing fat, NOT muscle and if you gain muscle, you gain weight, but muscle weight is good weight.
I told you already your weight can vary by as much as 9lbs in a day. Stop worrying about the scales. Take the readings, and perform a 3 day floating point average on them.
