I am curious whether your answer depends on your handedness. If there is a rationale which explains your preference, please elaborate!
I'm right handed and prefer over, not that I think handedness has anything to do with it.
I actually use two hands because I use one hand to hold the paper and tear with both hands once I have spooled out the precise length of paper required. If you just try ripping the paper off, it doesn't always tear and the roll will keep spinning and unraveling.
My wife saw the below picture once and now insists on having the paper facing 'over'.

I never thought it mattered. I just put the paper on the dispenser, I don’t pay attention to what direction it’s facing.

I don’t think handedness has anything to do with it. I’m left handed but I’ve never had a problem getting toilet paper no matter which way it’s facing or what side of the toilet it’s on.
In my house, we have it “under” because it kept my dog, when she was a puppy, from attacking it and pulling all the paper off the roll. It would just roll around and around and not come off. Now it’s just a habit.

Because at the end of the day, it has the same purpose no matter how it goes on. I was raised to put it on "under," and did all my life until I got on my own and have my own house. Now I basically place it however I feel like: over, under... has no effect on me.

Who cares which way just put it on there
Over is correct since I’ve tried both ways and it’s harder to grasp when it’s under and sometimes it keeps rolling so I keep in the over position even though it looks better in the under position, being right handed doesn’t make a difference, my ex was left handed and never said anything
It has nothing to do with left or right handed. Over is correct one. It's easier to grab paper that's not close to wall. Ergonomically it makes more sense on the first picture.
The original patent for this invention from the 19th century only shows "over" as the correct application.
Hotels everywhere use this option while at home people are onviously free to choose.Over is the easiest to reach. Especially in a pinch.
Other than that? Meh, no big deal. Same with toilet seat. I don't make a fuss about it. I care more about not getting evicted, not damaging my health, not starving, not passing out of fatigue etc... many more things needing real attention over trivial matters.
Doesn't matter if your left or right handed. Over is correct because it's more hygienic. There is less chance of the user's hand touching the wall. If the user has germs or traces of shit on their hands you don't want either transferred to the wall for the next person to touch.

There is an advantage to under in that there is slightly more friction so you can tear some sheets off more easily
I find that over just looks better. However both are equally functional unless you have a pet like a cat that likes to hit the roll with its paw. In which case under prevents the pet from unraveling the entire roll.
I am left handed and under is the right way to do it.
Over - of course. Hand dominance is irrelevant. Over is simply the easiest to use.
