Ironically, I would also want to speak Mandarin. My wife is Chinese and that is her native language.
15 years ago it would have been Cantonese and I would have LOVED it. 10 years ago Swedish then I wouldn't be here now and want Portuguese. At least now I will fit in more with my linguaphobia as it's Texas in two months, but the cultural difference may be a challenge.
I think it would be Spanish. That is the language I have the most everyday use for, and I'd certainly like to be able to learn it, but unfortunately I think the part of my brain that can learn another language is broken. I lived in Mexico City for a couple of years, and even when I lived there, I did not learn to speak Spanish.
Waking up with a different accent is well documented but I'm skeptical anyone has ever magically mastered another language.
Assuming I can still speak my own I'd like to wake up speaking Japanese.

French. I had 4 years of high school French and the only thing I learned was Soup DuJour.

@AviatorTom Tom, first of all I don’t believe that story. But if I could speak another language it would be Bonjour mon ami, I always loved the French language.
Au Francais. Je parle comme ci comme ca.. In other words I took it in Jr. High for a year and then dropped the elective in 10th grade because the "madame" came in speaking fluent French! Oh and something else from that time..

Mandarin Chinese, lots of speakers, most useful to learn.
I speak English and 3 Chinese dialects. I wouldn’t mind just wake up knowing french. We have a lot of French encounters.
I am jealous that my 4 yr old baby nephew speaks all 3 languages fluently.
Also Mandarin. I can speak English and Spanish, and get by in Greek.
