How to get my girlfriend to understand that I have so much going on and I'm just one person?

I think she doesn't understand that I'm one person - I homeschool my kids , I'm in college 3/4 of the time , I have responsibilities at home as I have to tend to my children, and I'm still making time for her... right now she's cold and distant - giving me the cold shoulder and were barely talking.. it hurts she knew that I had school and homeschooling my kids. We even talked about meeting up this summer, and I'll be done with school. I had to reach out to explain to her yet again that I'm one person and can't invest in our relationship 100; I'd love to, but can't..
